So I had to do some real playing around with the quantities to get the per-portion calories to be under 400 – and I did it… just! Coming in at 399 calories a portion (if you ignore the frylight calories, which would add literally 3 or 4 calories per serving), this is FAR healthier than the recipe I took inspiration from.
So this is my version of easy cheesy mustard (vegetarian) toad-in-the-hole with broccoli…

Portions: 3
Calories per portion: 399
Ingredients (calories are for all three portions):
70g plain flour = 255 calories
2 eggs = 140 calories
100ml semi skimmed milk = 49 calories
2 teaspoons of Dijon mustard = 8 calories
6 Linda McCartney vegetarian sausages = 384 calories
100g broccoli = 35 calories
1 leek = 38 calories
60g cheddar cheese = 250 calories
Bisto gravy = 39 calories
Plus frylight (depends on how many sprays you feel you need!)

Method:
STEP 1
Warm the oven to 240C and once up to temperature spray the bottom of an oven-proof dish with frylight. Add 6 frozen Linda McCartney sausages and cook for 10 minutes. While cooking, chop the broccoli and leeks then add these to the dish and cook for another 5-10 minutes until the vegetables are beginning to brown.
STEP 2
While the sausages and vegetables are cooking, mix the flour, eggs and 1 teaspoon of Dijon mustard together, then stir in the milk. Put the batter into the fridge (this can be done at the beginning of the process if you’d prefer your batter to sit for longer before using it).
STEP 3
Pour the batter over the sausages and vegetables and put back in the oven at 220C. Cook for 15 minutes – don’t open the oven during this time – this might prevent your Yorkshire rising!


STEP 4
Grate the cheese (or if you’re like me, use already grated cheese…) and mix with 1 teaspoon of mustard. Once the 15 minutes is up, sprinkle this over the batter, sausages and vegetables then place back in the oven for about 10 minutes until the cheese has melted to your liking.
STEP 5
Make the gravy according to packet instructions.

Serve and enjoy!
